Ok another meal photo. This Trader Joe's orange chicken, spinach, and white rice. I slightly modified the orange chicken by cooking up some apricots and cooking it in the orange sauce first and then adding it with the crispy baked chicken. It gave an interesting dynamic to the typical orange chicken. It is apricot season and they are pretty tasty. Day 213 is now complete.

The baby attacked her with his cuteness and his cheeks. In reality, I think she was off balanced and I managed to get this picture. He is now about 3.5 months old I think. My favorite part of a baby are their thighs. Their so cute and pudgy. Like all babies have that. It is like a given. Anyways, this little guy is getting bigger and cuter every time I see him.

The nephew had an amazing appetite today. He devoured his pancit (Filipino noodles dish) and the pieces of chicken on his plate. He finally has good control of his utensils and especially his fork. It is pretty amazing how much he ate. He is getting so tall and also very communicative as well. He looks pretty fierce on this shot.

Sorry I didn't plate up the dish to look good. But I was hungry and the flavors is what counts in the end. Man this really hit the spot. And fairly easy and healthy meal to make.

Red Curry with fish and vegetables.

Ingredients:
Frozen fish (I have tried Tilapia and Cod)
Frozen vegetables
2 Bell peppers
Thai Red Curry package
1 coconut milk

Step 1: Saute the green beans and red peppers (cut up in to strips) about 5-7min
Step 2: Add coconut milk and 1 Table spoon of the Thai Red Curry package
Step 3: Add the frozen fish to the pot and let it cook for about 10 minutes or till the fish is good and ready. Put the mixture to a boil and then let it simmer.
Step 4: Serve with rice or with Indian nan bread.

I have been wearing the same kind of Nike glasses for like 5 years. They fit me really well. I have had glasses since the 6th grade. I really have bad eyes. I had a pair of contact lenses like 3-4 years ago and I just could not get used to wearing them. Anyways, maybe I will try contacts again. Sorry another boring 365.
